It's hard to stay healthy when there is little to do other than eat; while eating isn't the ONLY thing to do, sometimes the most natural thing is to pick up a pint of ice cream and go at it. But eating healthy doesn't have to be a sacrifice! I have put together below a compilation of healthy yet delicious recipes for you to try, but I know that there are always more great recipes that I haven't tried. If you have a suggestion for a recipe that I should try and potentially add to the list, then let me know in the comments!
Lime-Cilantro Salmon
Ingredients:
- Salmon Fillets
- 2 cloves of Garlic
- 5 springs of organic fresh Cilantro or 2 tsp. of dried Cilantro
- 2 limes
- 2 tsp. of Olive Oil (1 for sauce, 1 for cooking)
Directions:
1.) Preheat oven to 400 degrees.
2.) Make the Garlic-Cilantro-Lime sauce:
Finely chop or press garlic to measure 1 tsp
Finely chop cilantro
Zest and juice the limes (to about 1 tbsp zest and 2 tbsp juice)
In a small bowl, mix garlic, cilantro, lime zest and juice, and oil
3.) Prepare the Salmon:
Heat skillet with olive oil to medium-high.
Salt and pepper and oil the fish lightly on all sides.
Place salmon flesh-side down in heated oil, cook for 4-5 minutes until salmon releases from the pan.
Flip salmon to flesh side up and transfer to the oven (if using cast-iron, the salmon can go directly from the stove-top to the oven).
Cook 8-12 minutes at 400 degrees.
4.) Spoon Cilantro-Lime sauce onto salmon.
Apple Crisp
Although there are 1 and a half cups of Brown Sugar, the recipe doesn't have any other added sweeteners, and it is full of fiber and vitamins. The recipe reminded me of an apple pie filling, and it is great with homemade whipped cream, hot or cold.
Ingredients:
- 12 cups of sliced apples
- 1/2 tsp. of cinnamon
- 2 tbsp. of lemon juice
- 1 tbsp. of water
- 1 1/2 cups of firmly packed brown sugar
- 1 cup of gluten-free all-purpose flour
- 1 cup of gluten-free rolled oats
- 2 tsp. of cinnamon
- 1/2 tsp. of nutmeg
- 1/8 tsp. of salt
- 3/4 cup of unsalted butter or non-dairy alternative
Directions:
1.) Preheat oven to 375°.
2.) In a large bowl, stir together sliced apples, 1/2 teaspoon of cinnamon, lemon juice, and water. Scoop into 9x13 baking pan.
3.) In a medium bowl, whisk together all topping ingredients except butter. Use a pastry cutter or 2 knives to cut in butter until mixture is crumbly. Sprinkle over apples.
4.) Bake at 375° for 45 minutes or until apples are tender and topping is crisp and browned.
5.) Serve warm with whipped cream or ice cream, etc.
Chicken Enchiladas
Ingredients:
- 2 chicken breasts, poached and shredded
- 4 oz of Philadelphia Cream Cheese
- 4 oz can of diced green chilis
- 4-6 oz of shredded cheese - Mexican blend or Cheddar/Jack
- 1/2 small onion, diced and sautéed
- 10oz of Cookwell & Company Green Chili Stew OR your favorite brand of green chili enchilada sauce (e.g. Hatch or Old El Paso brands)
- Cooking spray
- Homemade corn tortillas (with Corn Masa Flour, water, and lime juice)
Directions:
1.) Preheat oven to 375 degrees.
2.) In mixing bowl, stir together poached, shredded chicken breasts with 4 oz cream cheese.
Stir in about 2 oz of shredded cheese.
Stir in chilis and sautéed onion
Salt and pepper to taste
3.) Make the corn tortillas
4.) Spray a 9X13 inch baking pan with cooking spray
Using a serving spoon, spoon about 3 tbs of the chicken mixture into the middle third of each tortilla and roll-up. Lay stuffed, rolled tortillas side by side in baking dish. Poor chili stew (or enchilada sauce) over tortillas and sprinkle generously with the remainder of shredded cheese.
5.) Bake for about 20-25 minutes on 375 degrees, until hot and bubbly.
Grilled Greek Chicken
Ingredients:
- 2-3 lbs chicken thighs (skinless, boneless)
- 1/4 cup olive oil - 2 tbsp. of lemon juice
- 2 garlic cloves, minced
- 1 Tbsp. of oregano
- 1/2 tsp. of salt
- 1/4 tsp. of pepper
Directions:
1.) Marinate the chicken for at least 2 hours
2.) Grill the chicken
